This Instant Pot Roast Chicken recipe is so easy and delicious. Once you make it, you’ll wonder why you ever just by chicken breasts or thighs on their own. It’s so much more cost-effective to buy a whole chicken and cook it, and then use the bones from the chicken to make this Homemade Bone Broth Recipe (and then we make amazing soups like this Instant Pot Minestrone Soup. It’s like getting at least three meals out of one whole chicken. We also love to shred the chicken to make chicken tacos or taco bowls (Chipotle-style). Yum!

So what makes this Instant Pot Roast Chicken so good? The seasoning is flavorful… like rotisserie chicken that’s even better than Costco. And the chicken comes out so tender and juicy, it will literally fall off the bone.

The added bonus? This recipe is gluten-free and Paleo-friendly… and kid-friendly too. My kiddos ask for seconds when I make this recipe.

Make a whole roast chicken in less than an hour with the Instant Pot. This chicken recipe is like having a homemade rotisserie chicken without taking hours to cook.

Ingredients
  • 1 whole organic chicken (about 4-5 lbs)
  • 1 large onion cut in half
  • 1 lemon cut in half
Seasoning Spices
  • 1 tbsp organic garlic powder
  • 2 tsp Celtic salt
  • 1 tsp organic white pepper
  • 1 tsp organic black pepper freshly ground
  • 2 tsp organic paprika
  • 2 tsp dried thyme
Instructions
  1. Combine all seasoning spices in a small bowl and set aside.

  2. Remove the giblets from the chicken. Stuff the chicken cavity with the lemon and onions. 

  3. Rub the chicken with the seasoning spices, putting extra on top of the chicken. 

  4. Put a metal trivet in the Instant Pot. Add 1 cup water.

  5. Place the chicken on the trivet. The chicken should not be touching the water at the bottom of the Instant Pot inner pot. 

  6. Put the lid on and close it shut. Make sure the valve is sealed. 

  7. Set on high pressure for 30 minutes (or about 6 minutes per pound of chicken).

  8. When it's done, allow the pressure to naturally release for 10-15 minutes. 

  9. Save the liquid and bones from the chicken to make a delicious <a href="https://dontmesswithmama.com/how-to-make-homemade-stock-or-bone-broth/">chicken bone broth</a> later. I do this right after I make this chicken to get double time out of my crockpot before I put it away.

      Thank you! So glad you enjoyed it. So I updated it to an Instant Pot recipe to cut down the cooking time but the spices are the same. The original crock pot / slow cooker time was on high for 5 hours.

        Thank you! I thought I remembered rosemary in it also (maybe 1 TB?) and a little cayenne pepper (we call it spicy crock pot chicken). And I don’t remember the thyme….

    Did I miss something? I cut sprigs of rosemary from garden and just slipped on inside cavity and laid the rest around the chicken. Did not take rosemary off the sprig. Hope I did not make a mistake… :-/

    Hi – I just cooked a chicken today and want to make the bone broth from it. I have the liquid that came from cookkng the chicken in the crock pot. Should I dump that and start fresh with the bones, veg’s etc. and cook for 12 hours or can I use the liquid that is left from the chicken?

      I personally don’t use the liquid from the chicken for my broth. I strip all the meat off the bones and keep the cartilage. I do use the liquid in the chicken sometimes to make Paleo mashed potatoes or even make a gravy with it.

    How many potatoes to you add? Are they super mushy if they cook that long or do you recommend throwing in potatoes half way?

      Usually 3-4 medium potatoes. I put it all in. It is soft but I love it, and sometimes I’ll mash it with the juice left over from the cooked chicken to make mashed potatoes.
