Make this Instant Pot Roast Chicken in less than an hour. It’s made with a delicious rotisserie seasoning blend that the whole family will love.
This Instant Pot Roast Chicken recipe is so easy and delicious. Once you make it, you’ll wonder why you ever just by chicken breasts or thighs on their own. It’s so much more cost-effective to buy a whole chicken and cook it, and then use the bones from the chicken to make this Homemade Bone Broth Recipe (and then we make amazing soups like this Instant Pot Minestrone Soup. It’s like getting at least three meals out of one whole chicken. We also love to shred the chicken to make chicken tacos or taco bowls (Chipotle-style). Yum!
So what makes this Instant Pot Roast Chicken so good? The seasoning is flavorful… like rotisserie chicken that’s even better than Costco. And the chicken comes out so tender and juicy, it will literally fall off the bone.
The added bonus? This recipe is gluten-free and Paleo-friendly… and kid-friendly too. My kiddos ask for seconds when I make this recipe.
Instant Pot Roast Chicken

Make a whole roast chicken in less than an hour with the Instant Pot. This chicken recipe is like having a homemade rotisserie chicken without taking hours to cook.
- 1 whole organic chicken (about 4-5 lbs)
- 1 large onion cut in half
- 1 lemon cut in half
- 1 tbsp organic garlic powder
- 2 tsp Celtic salt
- 1 tsp organic white pepper
- 1 tsp organic black pepper freshly ground
- 2 tsp organic paprika
- 2 tsp dried thyme
-
Combine all seasoning spices in a small bowl and set aside.
-
Remove the giblets from the chicken. Stuff the chicken cavity with the lemon and onions.
-
Rub the chicken with the seasoning spices, putting extra on top of the chicken.
-
Put a metal trivet in the Instant Pot. Add 1 cup water.
-
Place the chicken on the trivet. The chicken should not be touching the water at the bottom of the Instant Pot inner pot.
-
Put the lid on and close it shut. Make sure the valve is sealed.
-
Set on high pressure for 30 minutes (or about 6 minutes per pound of chicken).
-
When it's done, allow the pressure to naturally release for 10-15 minutes.
-
Save the liquid and bones from the chicken to make a delicious chicken bone broth later. I do this right after I make this chicken to get double time out of my crockpot before I put it away.
Where to Get Kitchen Pantry Essentials
I get my other kitchen pantry supplies like sea salt, black pepper, spices, coconut oil, and other essentials either on Amazon or my local health food store usually. But then I got a Thrive membership. If you don’t already have one – it’s awesome! It’s like Whole Foods meets Costco. Bob’s Red Mill baking soda, for instance, is about $3 at my local health food store and $6 on Amazon. But it’s only $2.03 (YES!) on Thrive Market. Great deal right? And the raw honey?! Don’t even get me started how much that costs at the health food store. But on Thrive Market it’s just $5.45 for a 10.5 oz jar of raw honey.

I’ve been making this recipe for a few years and all of a sudden it has changed! Can you please email me the spices and amounts for the original crock pot recipe? It’s a family favorite! Thank you!
Thank you! So glad you enjoyed it. So I updated it to an Instant Pot recipe to cut down the cooking time but the spices are the same. The original crock pot / slow cooker time was on high for 5 hours.
Thank you! I thought I remembered rosemary in it also (maybe 1 TB?) and a little cayenne pepper (we call it spicy crock pot chicken). And I don’t remember the thyme….
Looks easy! Might try it sometime. It’s good that you make bone broth out of the left over chicken bones as well.
Did I miss something? I cut sprigs of rosemary from garden and just slipped on inside cavity and laid the rest around the chicken. Did not take rosemary off the sprig. Hope I did not make a mistake… :-/
Not at all. This recipe is so simple. Rosemary inside the cavity and around the chicken are fantastic. You don’t need to take off the sprig. Enjoy!
Is it a must to use organic spices for this recipe to be gluten-free?
No, but I do recommend getting through a trusted source to get the best-quality ingredients.
Hi – I just cooked a chicken today and want to make the bone broth from it. I have the liquid that came from cookkng the chicken in the crock pot. Should I dump that and start fresh with the bones, veg’s etc. and cook for 12 hours or can I use the liquid that is left from the chicken?
I personally don’t use the liquid from the chicken for my broth. I strip all the meat off the bones and keep the cartilage. Here’s my bone broth recipe: https://dontmesswithmama.com/how-to-make-homemade-stock-or-bone-broth/. I do use the liquid in the chicken sometimes to make Paleo mashed potatoes or even make a gravy with it.
How many potatoes to you add? Are they super mushy if they cook that long or do you recommend throwing in potatoes half way?
Usually 3-4 medium potatoes. I put it all in. It is soft but I love it, and sometimes I’ll mash it with the juice left over from the cooked chicken to make mashed potatoes.
My whole family loved this. I screw up a lot of stuff but this turned out perfectly. Thanks!
That’s awesome! I’m so glad you all liked it. I love this recipe because it’s so easy – and the chicken just falls off the bone. Save the bones to make some bone broth: https://dontmesswithmama.com/how-to-make-homemade-stock-or-bone-broth/
I have been thinking about doing a whole chicken in the crock pot. This looks so easy that I just may have to try it.
Looks so simple to make…and delicious!
Sounds wonderful! I’m going to try it.
