Love artichokes? Make them even faster in the Instant Pot electric pressure cooker. You’ll get them ready to eat in about 20 minutes from start to finish. Serve them up as an appetizer, snack or side dish with melted garlic butter, mayonnaise or your favorite dipping sauce. I’ll even show you how to pick the right artichokes for cooking and eating.
Artichokes are delicious! They’re full of nutrients, antioxidants, and fiber, and on top of all that, they taste great when you dip them in garlic butter. Yum!
If you’ve never eaten one before, or cooked one before, I’ll show you how to pick them at the grocery store, how to cook them in the Instant Pot, how to serve them up with delicious dipping sauces and how to eat them.
Artichokes make the perfect appetizer or side dish with your favorite dishes. I like to serve them up with steak, roast chicken, grilled shrimp, Italian dishes, or even for Thanksgiving.
What is an Instant Pot?
The Instant Pot is a 7-in-1 Multi-Functional Cooker – including a pressure cooker, slow cooker, rice cooker, saute/browning, yogurt maker, steamer and warmer. It also has a stainless steel cooking pot and steam rack. I have literally gotten rid of my old slow cooker and yogurt maker because I can do it all with the Instant Pot.
Could you use any electric pressure cooker? Yes, but cook times may vary so refer to your pressure cooker manual.
How to Pick the Right Artichokes
The perfect artichokes for this recipe should be larger (about 11 inches around) and bright green. Look for artichokes that have all green petals, no dark purple leaves.
If you can’t find large ones, look for small artichokes that are bright green and firm to the touch. The petals should be tightly fitted around the plant.
How to Make Artichokes in the Instant Pot
1. Use kitchen scissors to trim off the thorn tips off all the petals. With a sharp knife, cut off about 1-2 inches from the top and about an inch from the stem.
2. Soak artichokes in a bowl of cold water and lemon juice for 5 minutes. Remove them from the water and drain them, upside down in a colander for a couple of minutes, then dry them a bit with paper towels. Lay the artichokes on a cutting board, on their side, and pull off any small petals at the base.
3. Place a trivet or steamer basket in the bottom of the liner for your Instant Pot. Place cold water, lemon slices, and garlic cloves in the bottom and place the artichokes on top of the trivet or steamer basket. Place the lid on the Instant Pot until it beeps and locks. Make sure the pressure valve is set on ‘SEALING’, and press the Manual button, and set the time for 9 minutes. If the artichokes are really large, increase the time by 3 minutes.
4. When the Instant Pot is done cooking, do a Quick Release by turning the pressure valve to VENTING. Be sure to use a pot holder to turn the valve to release the pressure.
5. While the Instant Pot is releasing pressure, heat butter, minced garlic and garlic salt in pan on low heat. Once melted, pour the butter into 2 small ramekins.
6. Remove the lid from the Instant Pot, and with large kitchen tongs, remove the artichokes from the Instant Pot to a dish. Serve the with the garlic butter.
How to Eat Artichokes
When you eat artichokes, you’re only eating the white part of the petal that’s closest to the plant – no the outside part. Pull the petals off the artichoke, dip in butter, and eat the end that was attached (like a scraping motion to get the soft part of the petal).
Keep eating the petals (there are layers of them) until you get to the center of the artichoke. When all the petals have been eaten, cut the fuzzy part of the artichoke out (don’t get that part) but leave the artichoke heart. It’s the soft part around the fuzzy area that’s very tender and delicious.
What to Serve with Artichokes
In our family, we’re pretty divided between mayonnaise and melted butter. Serve it up with both and offer some fixings to add to the dip or sprinkle on the artichokes.
- Melted butter
- Melted butter with garlic
- Melted butter with lemon pepper
- Mayonnaise
- Mayonnaise with sriracha
- Grated parmesan
- Breadcrumbs (or gluten-free breadcrumbs)
- Olive oil, garlic and rosemary
Top Tips to Make This Artichokes
- Be sure to pick artichokes that are bright green with all green petals (no dark purple leaves). Artichokes should be firm to the touch.
- Cut artichokes about 1-2 inches from the top and the stem (bottom) before cooking.
- Be careful not to overcook artichokes or they become too soft. Follow the directions on cooking time.
- Serve artichokes with your favorite dipping sauce like melted butter with garlic, mayonnaise, or olive oil and garlic.

Instant Pot Artichokes
Equipment
- Instant Pot
- Instant Pot trivet or steamer basket
- Measuring cup
- Measuring spoon
- Large kitchen tongs
- Ramekins
- Knife
- Kitchen scissors
Ingredients
- 8 cups water (for soaking)
- 3 tbsp lemon juice (for soaking)
- 2 artichokes (about 1/2 lb each)
- 3 lemon slices
- 3 cloves garlic
- 4 tbsp butter
- 1/2 tsp garlic salt
Instructions
- Lay the artichokes on a cutting board, on their side, and pull off any small petals at the base. Use kitchen scissors to trim off the thorn tips off all the petals. With a sharp knife, cut off about 1-2 inches from the top and about an inch from the stem.

Place a cup of cold water, 3 lemon slices, and 2 cloves of garlic in the bottom and place the artichokes on top of the trivet or steamer basket. Place the lid on the Instant Pot until it beeps and locks. Make sure the pressure valve is set on 'SEALING', and press the Manual button, and set the time for 9 minutes. If the artichokes are really large, increase the time by 3 minutes.
- When the Instant Pot is done cooking, do a Quick Release by turning the pressure valve to VENTING. Be sure to use a pot holder to turn the valve to release the pressure.
- While the Instant Pot is releasing pressure, heat 4 tbsp of butter, 1 clove garlic minced, 1/2 tsp garlic salt in pan on low heat. Once melted, pour the seasoned drawn butter into 2 small ramekins.
- Remove the lid from the Instant Pot, and with large kitchen tongs, remove the artichokes from the Instant Pot to a dish. Serve the with the garlic butter.
