Okay, don’t get me wrong… I LOVE my coconut milk. It’s absolutely delicious and so creamy. But sometimes I want almond milk – my other favorite non-dairy milk. It just goes so well when I’m making this Strawberry and Almond Butter Smoothie. So I wanted to show you how to make almond milk – it’s really so super easy.
Before we get into making almond milk, I wanted to explain why it’s so much better to make your own. First, it’s cheaper. There done deal. 😉 But really the bigger benefit is there’s no weird preservatives like you’ll see with boxed almond milk in the store. For example, check out the ingredients list on a popular brand of almond milk in grocery stores:
Almond Milk (Filtered Water, Almonds), Calcium Carbonate, Tapioca Starch, Sea Salt, Potassium Citrate, Carrageenan, Sunflower Lecithin, Natural Flavor, Vitamin A Palmitate, Vitamin D2 and D-Alpha-Tocopherol (Natural Vitamin E)
Uh, what? First, of all the carrageenan concerns me. It’s a food additive that has been linked to gastrointestinal inflammation, including colon cancer. The sad thing is that carrageenan is a common additive in coconut milk, almond milk, and even baby formula. This is one of the biggest reasons I advocate for making your own. All you need it almonds and water – not the other junk.
The second ingredient that I have an issue with is the “natural flavor”. Who know’s what’s in there. It could be another 50 ingredients to make up that so-called natural flavor. No thanks. I’m good.
Here’s the thing – you can make almond milk in less time than it takes you to get in the car and drive to the grocery store. It takes just a little prep work and then you’ll be done in a couple of minutes.
Plus, there’s a bonus of making almond milk… you’ll have almond meal (flour) leftover, which you can use to make almond butter or use as almond flour for your favorite cooking and baking dishes. Win! I’ll show you what to do with that almond meal when you’re doing making almond milk so just keep reading.
How to Make Almond Milk
First, soak raw almonds in a bowl of filtered water (completely cover the almonds – there should be an inch of water above the almonds). Let soak for 12 hours or overnight. This helps to remove the phytic acid from the almonds so the milk and almond meal are more easily digestible in the body. Drain almonds in a strainer and rinse well.
Add almonds to a Vitamix and add 4 cups of water (the ratio of almonds to water is 1:2). Blend for about 5 minutes.
Pour mixture through a sieve or nut milk bag to separate liquid from almond meal.
Store almond milk in the refrigerator up to 2-3 days. You can also freeze and defrost to use for later.
