Ingredients

  • 1 cup water
  • 3 lbs medium potatoes all about the same size

Optional

  • 2 tbsp olive oil

Instructions

  • Place the steam rack in the inner stainless steel pot. Add water, and place potatoes on top of the steam rack.
  • Close lid and turn the steam vent to "sealed". Set to Manual at High Pressure for 10 minutes. Remember it takes an additional 10-12 minutes for the Intstant Pot to come to pressure.
  • When the Instant Pot beeps when it's done, turn the steam vent to do a Quick Release of the pressure. Carefully remove the potatoes. 
  • You can serve potatoes as is. Or if you want the potatoes to have a crispy skin, brush them with olive or avocado oil and broil in the oven for 3-5 minutes.
