Gather your ingredients together. Shred cheese if it's not been done already.
In a separate bowl, add the almond flour, coconut flour, garlic salt, and seasoned salt, and stir altogether. Add shredded cheese.
In a heavy sauce pan, melt the cheese and butter on low heat, until it's smooth. Remove the sauce pan from the heat. Place an egg in a bowl and beat together until well blended. Add the egg mixture to the sauce pan and stir to blend. Add the flour mixture immediately, and stir all ingredients together.
Place a large piece of parchment paper on the counter, and sprinkle coconut flour over the paper. Turn out the cheese mixture onto the floured surface, and sprinkle a little more coconut flour on top of the cheese dough mixture. Place a piece of parchment paper on top of the cheese dough, and with a rolling pin, roll the dough as thinly as possible, to about an 1/8 of an inch thick.
Remove the top piece of parchment paper, and with a knife, or pastry wheel, cut the crackers into 1 - 2 inch squares. Prick the crackers with a fork, and then brush with melted butter. Sprinkle with the coarse ground garlic salt, and press down on the salt to press into the dough.
Leave the dough on the parchment paper, and slide the parchment paper on to a cookie sheet, or pizza pan. Place cookie sheet in a 350 degree oven for about 20 - 25 minutes, or until the crackers turn light golden brown around the edges.
Remove the crackers, and let them cool completely before removing from parchment paper. Makes about 75 crackers.
