Gather your ingredients together. Shred cheese if it's not been done already.
In a mixing bowl, combine 1 cup almond flour, 1 cup coconut flour, and 1/2 tsp garlic salt.
In a sauce pan, melt the cheese and butter on low heat.
Add egg, cheese, and butter to the mixing bowl, and mix well.
Remove dough and place on cutting board. Sprinkle 1/4 cup coconut flour on the dough, and place a piece of parchment paper on top.
Use a rolling pin to roll dough to 1/8" thickness. Use a knife, pastry wheel, or cookie cutters to cut into 1-2 inch squares.
Prick each cracker with a fork, drizzle remaining butter, and sprinkle a bit of garlic salt on top.
Leave on parchment paper and slide onto a baking sheet. Bake for 20-25 minutes or until golden brown.
Remove the crackers, and let them cool completely before removing from parchment paper. Makes about 75 crackers.
