Ingredients

Pizza Toppings

  • 3/4 cup BBQ sauce
  • 2 tbsp tomato paste
  • 1 tsp dried Italian seasoning
  • 2 roasted chicken breasts cut into bite-sized pieces
  • 1 red onion thinly sliced
  • 1/2 cup cooked bacon crumbled
  • 1 cup mozzarella cheese shredded
  • 1/4 cup parmesan cheese grated

Instructions

  • Heat oven to 425°F.
  • In a large bowl, combine gluten-free flour, baking powder, basil, oregano, water, oil, eggs, and honey, and mix together until well combined.

  • Let sit for about 5 minutes.

  • Place the dough on a pizza pan or cookie sheet. Put parchment paper or plastic wrap on top of the dough and use hands or a rolling pin to spread the dough out. Thickness of the dough will be about 1/4 inch. Bake for 15 minutes, at 425 degrees. Dough may crack, but that's okay.

  • While the crust is baking, make the sauce, and prepare toppings. In a heavy saucepan, combine the BBQ sauce, tomato paste, and Italian seasoning, and heat until ingredients are well mixed. Remove from heat. 
  • When crust is done, remove from oven, and spread the BBQ-tomato sauce on the crust.  Sprinkle the bacon, chicken, and onions on the crust. Then top with mozzarella and parmesa cheese.
  • Place the pizza back in the oven for 15 - 20 minutes, or until the cheese is melted and all toppings are golden brown.

  • Remove from oven and let sit for a few minutes to cool down. Cut and serve.
