Ingredients

Base Crustless Gluten-Free Quiche Recipe

  • 6 eggs, beaten
  • 1 medium onion, chopped
  • 1 clove garlic, chopped
  • 1 tsp course ground Himalayan salt
  • 1 tsp fresh ground black pepper
  • 1 dash nutmeg, finely ground
  • 1 cup cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated can omit if preferred
  • 1/2 cup small curd cottage cheese can omit if preferred
  • 1/4 cup Italian flat parsley, chopped

Customizable Ingredients

  • 1 cup ham, chopped or 1 cup chopped bacon or any meat or omit if preferred
  • 1 green pepper, chopped or 1 cup of frozen spinach (thawed and drained) or 1 cup artichoke hearts, chopped

Instructions

  • Preheat the oven to 350 degrees. Grease a 9 x 13 baking dish with butter, and set aside.  
  • Chop the ham, green pepper, parsley, and onion. 
  • In a stand mixer, crack the eggs into the mixing bowl, and with the whisk attachment, whisk the eggs until they're light colored and fluffy, about 2 minutes. 
  • Turn off mixer, and add the ham, cheddar cheese, Parmesan cheese, green pepper, onion, garlic, cottage cheese, salt, pepper, and chopped parsley. Mix at low speed, just until all ingredients are blended. Remove mixing bowl, and scrape sides with a spatula, and stir well. 
  • Pour mixture into buttered dish, and bake at 350 for 45-60 minutes, or until light golden brown, and puff springs back when touched. 
  • Serve immediately and enjoy!

Notes

How to customize this recipe

  • Swap out the ham and green pepper for 1 cup of bacon, chopped and 2 stalks of green onions, chopped.
  • Swap out the ham and green pepper for 1 cup of frozen spinach (thawed and drained - squeeze out all the moisture). 
  • Swap out the ham and green pepper for 1 cup artichoke hearts, chopped and 1/2 cup sun-dried tomatoes and swap out the Parmesan cheese for crumbled feta for a Mediterranean-inspired quiche. 

How to make crustless gluten-free quiche muffins

  • Get a 12-muffin tin and spray with cooking spray or grease with butter.
  • Make the base quiche recipe and fill individual muffin tins.
  • Have the kids build their own quiche muffins. Offer customizable ingredients like ham, bacon, tomatoes, artichoke hearts, spinach, green onions, hash browns, etc. Just add a sprinkle of ingredients to each tin (about 1-2 tbsp of mix-ins). Mix in with a fork.
  • Bake at 350 degrees for 20-25 minutes or until center comes out clean with a fork.
