- 8 oz gluten-free macaroni
- 1 cup milk full-fat milk is best
- 2 cups Sharp cheese shredded
- 2 tbsp butter
- 1-2 cloves garlic finely chopped
- 1/4 onion finely chopped
- 1 tbsp gluten-free flour
- 1/2 tsp nutmeg
- 1/2 tsp salt
- black pepper to taste
- 1/4 cup Parmesan cheese
- 1 tbsp fresh basil optional, garnish
Bring a large pot of water to a boil. Add gluten-free macaroni and cook until done. Drain in a colander and set aside.
Melt butter in large cast iron pan and saute garlic and onions for 1-2 minutes on medium heat.
Add milk, cheese and gluten-free flour to pan. Whisk flour in slowly until all lumps are out.
Add nutmeg, salt and pepper.
Remove pan from heat and add pasta to cheese sauce. Stir until cheese sauce is throughly mixed in pasta.
Top with Parmesan cheese and broil in the oven until cheese is melted and slightly browned.
Remove from oven and garnish with fresh basil.
