Ingredients

  • 8 oz gluten-free macaroni
  • 1 cup milk full-fat milk is best
  • 2 cups Sharp cheese shredded
  • 2 tbsp butter
  • 1-2 cloves garlic finely chopped
  • 1/4 onion finely chopped
  • 1 tbsp gluten-free flour
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • black pepper to taste
  • 1/4 cup Parmesan cheese
  • 1 tbsp fresh basil optional, garnish

Instructions

  • Bring a large pot of water to a boil. Add gluten-free macaroni and cook until done. Drain in a colander and set aside.
  • Melt butter in large cast iron pan and saute garlic and onions for 1-2 minutes on medium heat.
  • Add milk, cheese and gluten-free flour to pan. Whisk flour in slowly until all lumps are out.
  • Add nutmeg, salt and pepper.
  • Remove pan from heat and add pasta to cheese sauce. Stir until cheese sauce is throughly mixed in pasta.
  • Top with Parmesan cheese and broil in the oven until cheese is melted and slightly browned. 
  • Remove from oven and garnish with fresh basil.
