  1. First, soak raw almonds in a bowl of filtered water (completely cover the almonds - there should be an inch of water above the almonds). 
  2. Let soak for 12 hours or overnight. This helps to remove the phytic acid from the almonds so the milk and almond meal are more easily digestible in the body.
  3. Drain almonds in a strainer and rinse well.
  4. Add almonds to a Vitamix and add 4 cups of water (the ratio of almonds to water is 1:2). Blend for about 5 minutes.
  5. Pour mixture through a sieve or nut milk bag to separate liquid from almond meal.
  6. Store almond milk in the refrigerator up to 2-3 days. You can also freeze and defrost to use for later.
