  1. Heat a large cast iron skillet to medium and add bacon fat or coconut oil. Make sure the oil is hot before adding fish.
  2. On a cutting board, cut fish into 3-inch strips.
  3. In a medium-sized bowl, add fish, garlic, paprika, salt and pepper. Mix well and set aside.
  4. On a separate large plate or bowl, add flour and cheese. Take 3-4 pieces of fish at a time and coat well with the flour and cheese mixture, then add to skillet.
  5. Cook fish for about 2-3 minutes on each side, then set aside on a wire cooling rack so coating doesn’t get soggy.
  6. Repeat steps 3 and 4 until all fish is done.
