  1. Combine all ingredients except the chocolate chips in a medium-sized bowl and stir until well mixed.
  2. Melt the chocolate chips in a double boiler until it turns into a thick liquid.
  3. Line a mini muffin pan with 15 cupcake or silicone liners.
  4. Fill each cupcake liner with about 1 teaspoon of melted chocolate to coat the bottom. Put cupcake pan in the freezer for about 5 minutes to let the chocolate solidify.
  5. Remove from freezer then scoop about 1 tablespoon of the coconut/peppermint mixture into each liner. Put the muffin pan in the freezer for 5 minutes to let it solidify.
  6. Remove from freezer and top with the remaining melted chocolate.
  7. Return to the freezer for about 10-15 minutes to let it solidify.
  8. When ready to serve, take out of the refrigerator and remove the cupcake liner. You’ll have that gorgeous indentation mark from the liner.
  9. Keep in the refrigerator or freezer when not serving since the chocolate may melt again – especially if it’s hot.
