Instant Pot Stuffed Pepper Soup {Slow Cooker, Stove Top Options}

This Instant Pot Stuffed Pepper Soup is hearty, comforting and super easy to make using simple ingredients like ground turkey, bell peppers, rice, and broth. This heartwarming soup is so delicious the whole family will love it, and it’s an easy weeknight meal you can serve up in just about 30 minutes.

What is Stuffed Pepper Soup?

Stuffed Pepper Soup is an Instant Pot soup made using all the ingredients required for the family favorite, stuffed peppers. Instead of the peppers being stuffed with tasty ground turkey or beef and rice they are diced and added to the Instant Pot with broth for a delicious soup that’s packed full of flavor.

That way you can enjoy the delicious flavors of stuffed peppers but without the effort of making the filling and the delay of waiting for them to bake. Thanks to this Instant Pot recipe it takes just 30 minutes from chopping board to bowl. Simply prep the ingredients and let the instant pot do the rest.

About The Ingredients

  • Ground Turkey: Use lean ground turkey (90% +) if possible for best results. This recipe also works with ground beef, ground Italian sausage or even chicken if you prefer.
  • Bell Peppers: My family’s favorites are red and yellow peppers. For an even more intense flavor you could roast your peppers before hand.
  • Beef Broth: You can use any kind of broth you prefer or ideally make your own homemade broth.
  • White Rice: The type of rice you use will not affect this recipe as long as the rice is uncooked and rinsed before adding. If you are using up leftover rice, make sure to add it near the very end to avoid your soup turning into a porridge consistency.
  • Italian Seasoning: This is usually a blend of basil, oregano, thyme, rosemary and marjoram. Feel free to add these individually or use fresh herbs if you prefer.

How to Make This Stuffed Pepper Soup

Instant Pot Option

  1. Set the Instant Pot to sauté mode. Add avocado oil, garlic and onion. Sauté for a few minutes.
  2. Add ground turkey. Break up the meat and sauté until turkey meat is brown.
  3. Once the turkey is cooked, add the chicken broth to deglaze the pot.
  4. Add the diced peppers, rice, tomato sauce, and Italian seasoning.
  5. Close the lid and pressure valve, and set to pressure cook for 8 minutes. Remember it takes about 8-10 minutes to come to full pressure first.
  6. When it’s done, allow the Instant Pot to naturally release pressure. This takes about 8-10 minutes.
  7. Once the float valve is down (this indicates all pressure is released), open the lid and stir the soup. Add, salt, pepper and red chili flakes, to taste.
  8. Optional: Serve topped with shredded cheese and gluten free bread.

Stovetop Option

  1. Cook the rice first. While it’s cooking, you can get the other parts of this dish ready.
  2. Place a large pot on the stove on medium heat. Add avocado oil, garlic and onion. Sauté for a few minutes.
  3. Add ground turkey. Break up the meat and sauté until turkey meat is brown.
  4. Once the turkey is cooked, add the chicken broth to deglaze the pot.
  5. Add the diced peppers, tomato sauce, and Italian seasoning. Let it simmer for about 15 minutes.
  6. Once the rice is done, add it to the pot and continue to simmer for an additional 8-10 minutes before serving.
  7. Add, salt, pepper and red chili flakes, to taste.
  8. Optional: Serve topped with shredded cheese and gluten free bread.

Slow Cooker or Crockpot Option

  1. Place all ingredients except rice in the slow cooker and stir well.
  2. Cook on low heat for 4-5 hours or high heat for 2-3 hours.
  3. Add cooked rice and stir well. Turn on high heat and let simmer for 15 minutes.
  4. Optional: Serve topped with shredded cheese and gluten free bread.

What to Serve with This Soup

Traditionally, stuffed peppers are topped with cheese so why not sprinkle some on your soup too. Feel free to add shredded cheddar or a little parmesan also adds a lot of flavor. Soup and bread go hand in hand, so why not make this delicious gluten free bread to enjoy alongside.

What Kind of Meat is Best?

Although I use ground turkey in this recipe, you can also use ground beef, ground Italian sausage or even ground chicken if you prefer.

What Kind of Rice is Best?

I use medium-grain white rice for this recipe, however, you can use long grain rice, brown rice or for a low carb alternative you could try with cauliflower rice. Regardless of which rice you use make sure to rinse thoroughly before adding to your Instant Pot. This is because rice contains a lot of starch which can create a gummy film on your soup if not rinsed beforehand.

Can You Freeze This Soup?

Yes. However, if you plan on freezing this soup or saving any for leftovers, do not add the rice until reheating. This is because the rice will go mushy and turn your soup into a porridge consistency as it soaks up the majority of the broth.

Top Tips

  • To make this recipe low carb, remove the rice.
  • To make this soup extra warming add in some hot paprika or cayenne pepper
  • This soup tastes even better the next day
  • Add a little more rice if you prefer a thicker consistency and more of a hearty meal
