Who else loves Taco Tuesday? Yep, it’s a big hit in our home too. In fact, we love to have tacos and Mexican food pretty much any day of the week. Living in San Diego will do that to you. We have access to the best Mexican food in the US.

One of my family’s favorite food is refried beans. We use it as a dip for our tortilla chips, make tostadas and even just eat it with a side of Mexican rice. My youngest son is a picky eater but he LOVES his refried beans.

I use to make it in the slow cooker but I’d have to schedule a full day and prepare in advance to make it. And then I found the Instant Pot.

Now we make Instant Pot Refried Beans and get it done in a little over an hour. So that means I don’t need to prep a lot in advance. I can get the Instant Pot Refried Beans going while I make a taco bar and get the fixings ready and have it all done at the same time – all in just over an hour. WIN!

How to Make Instant Pot Refried Beans

You can can easily double this recipe to make even more Instant Pot Refried Beans to feed a big crowd – like a pot luck or family reunion. You can also freeze the beans once it’s done. We do that IF we have leftovers but usually we finish it within a day or two.

What if you don’t have a ham hock? You could substitute 4 oz of cooked smoked bacon or smoked ham instead. It will taste delicious! Look for pasture-raised bacon or ham to avoid nitrates and to conscious-raised animals (it’s so much better for you and tastes better too).

Instructions
 

  • Add all ingredients to inner pot.
  • Turn pressure valve to sealed. 
  • Set on manual pressure for 45 minutes. 
  • After a 20-minute natural release, do a quick release to let out remaining pressure. 
  • Reserve 1 cup liquid, drain the beans and then discard the ham hock. 
  • Use an immersion blender or food processor to blend beans, and add in reserved liquid as needed to reach desired consistency.

  2. How in the world did people make refried beans for centuries without an immersion blender or food processor, of which I have neither?

    But I do have an Instant Pot and would like to try this.
