Who doesn’t love the rich and tangy combination of lemon and cream? This recipe is guaranteed to be a family favorite thanks to it’s delicious flavor but also it’s speedy time. Rumbling tummies and busy moms will appreciate that this instant pot creamy lemon chicken is ready in under 30 minutes thanks to the Instant Pot.

About The Ingredients

Chicken Breasts: Boneless, skinless chicken breasts work best. If you are on a keto diet, switch the breasts for chicken thighs as they contain more fat and adjust the cooking time accordingly.

Chicken Stock: You can purchase ready-made, or try using homemade broth for best results.

Parmesan Cheese: Freshly grated offers the best flavor and elevates the creamy sauce.

Cream: For the ultimate creamy flavor do not skimp on the cream. Normally I’d recommend an alternative such as almond milk but feel for a velvety sauce you need heavy cream.

Italian Seasoning: Alternatively, you can use ½ tsp of dried oregano and ½ tsp of dried basil.

Lemon Juice: Freshly squeezed is best. You can also use the lemon zest for some added oomph.

How to Make Instant Pot Creamy Lemon Chicken Step-by-Step

  1. Add Italian seasoning, Red pepper flakes, minced garlic, and chicken stock to your instant pot. Whisk together.
  2. Then add in the chicken breasts. Coat them in the stock mixture, not forgetting to flip to the other side so that they are evenly covered.
  3. Close the lid on your Insta pot and close the ceiling valve. Set your instant pot on high pressure for 12 minutes. Once the timer is done, do a quick release by bringing the sealing valve towards you.
  4. Remove your chicken. Set aside.
  5. Turn your instant pot on to sauté mode. Allow it to heat up which should take about two minutes. Add in the rest of your ingredients: heavy cream, lemon juice, and Parmesan cheese.
  6. Allow the sauce to reduce and simmer for about seven minutes.
  7. Serve your chicken, and use the sauce to pour over each breast.

Serving Ideas

To make a complete Keto or low-carb meal, pair your Instant Pot Creamy Lemon Chicken with cauliflower rice or zucchini noodles. Alternatively, it works well with pasta, rice or mashed potatoes.

Storage

Store in an airtight container in the refrigerator for up to 4 days. Reheat in a frying pan or microwave, only serve once steaming hot. Due to the heavy cream content, this recipe isn’t ideal for home freezing.

Equipment

  • Instant Pot or electric pressure cooker

Ingredients
  

  • 2 chicken breasts boneless skinless
  • 1 cup chicken stock
  • 4 tbsp garlic minced
  • 1 tbsp Italian seasoning
  • 1/4 tsp red pepper flakes

Sauce

  • 3/4 cup heavy cream
  • 2 tbsp lemon juice
  • 1/8 cup Parmesan cheese freshly grated

Instructions
 

  • In the inner pot, add Italian seasoning, red pepper flakes, minced garlic, and chicken stock. Whisk together.
  • Add the chicken breasts to the inner pot. Coat them in the mixture, and then flip so both sides are evenly covered.
  • Put on the lid, and then close the ceiling valve. Set on high pressure for 12 minutes (remember it takes about 10-12 minutes for the Instant Pot to come to pressure). Once the timer is done, do a quick release by bringing the sealing valve towards you.
  • Remove your chicken. Set aside.
  • Turnt the Instant Pot on to sauté mode. Allow it to heat up which should take about 2 minutes. Add in the rest of the ingredients: heavy cream, lemon juice, and Parmesan cheese.
  • Allow the sauce to reduce and simmer for about seven minutes.
  • Serve your chicken, and use the sauce to pour over each breast. Add more or less to your liking. Enjoy!
