Instant Pot Corn on the Cob

Why Make Corn in the Cob in the Instant Pot

The most common way to make corn on the cob is by boiling it. You bring a large saucepan of water to a boil, add the husked corn ears to the water and boil the corn for 8-10 minutes.

We all know it’s not complicated, but it is time consuming. It takes a long time for the water to come to a boil, it heats up your house and you have to keep an eye on the boiling corn.

The Instant Pot has made the process a complete breeze! Just add the corn and a cup of water to the pot and cook it for 3 minutes. It turns out perfect every single time.

When to Cook Corn on the Cob

Fresh corn on the cob is best if cooked as soon as possible after picking, but that’s not always practical. Once you have brought the corn home, place the ears in your refrigerator as soon as possible.

Cold temperatures slow down the chemical reaction that causes corn to lose its sweetness. Leave the husk on, and let the corn sit in the refrigerator uncovered instead of wrapped up tightly in a plastic bag. It’s best if cooked within three days.

Meals to Serve with This Instant Pot Corn on the Cob

Serve it with a big basket of freshly sliced Gluten-Free Bread and butter. Or, make vegetable burritos with Gluten-Free Tortillas and diced veggies. You can coat the cob in a zesty marinade and use a butter knife to slice off the kernels. Add the corn to the burrito and enjoy it fresh off the cob.

Corn on the cob has an earthy, natural taste that pairs well with fish, like this Gluten-Free Fried Fish. Make a marinade with red pepper seasoning and paprika for the fish. Grill it and serve with corn on the cob and a creamy dill dip.

You also pair it with the best Gluten-Free Chicken Strips and serve it with lemon butter sauce. Serve it with corn on the cob.  You could also try grilled chicken sandwiches. A little extra salt will make the corn taste just as good.

How to Make this Instant Pot Corn on the Cob

  1. Cut the ends off of the ears of corn (you can fit more in this way). Shuck it if you want to.
  2. Place the trivet in the pot, and pour in 1 1/2 cups of water (2 cups for the 8 qt).
  3. Stack the ears of corn in the pot. Close the lid and set the steam release knob to the sealing position.
  4. Press the Pressure Cook/Manual button or dial, then the + or – button or dial to select 2 minutes (3 to 4 minutes for unshucked corn).
  5. When the cooking cycle is finished, turn the steam release knob to the Venting position to do a Quick Release of the pressure
  6. When the pin in the lid drops down, open the lid and carefully remove the corn. Slather with butter and sprinkle with salt, and enjoy!

Storage Tips

Once cooked, corn will stay good for three to five days in the refrigerator and 10 to 12 months in the freezer.

Top Tips for Instant Pot Corn on the Cob

  • Plug in your Instant Pot and keep the inner cooking pot inside the pot while adding ingredients.
  • Do not overfill the Instant Pot.
  • For safety, wear an oven mitt to switch the valve to the “vent” for steam release and stay clear of the hot steam.
  • Do not open the Instant Pot until the pressure has fully released and the pressure indicator has dropped back into resting position. Remember: if the pressure indicator is raised, there is pressure behind it. 
  • When choosing your corn, feel the corn through the husk. The kernels should feel evenly firm and plump without gaps or holes. The “tassels” or silk threads at the top should be brown and sticky to the touch. If tassels are black or dry, the corn is old. The husk or leaves should be tightly wrapped around the corn and bright green in color. Dry, brown or loose husk indicates old cobs. Avoid cobs with brown holes, especially towards the top which can indicate worms.

  • 1.5 cups water

    Another great recipe for my Instant Pot! The corn-on-the-cob turned out just right and was much easier than waiting for a pot of water to boil. Thanks for the tip on how to pick a good ear of corn!

    This corn was soo good! I never know when it’s done on the stove, or I forget to set a timer so I love that the pressure cooker takes out all the guess work. You can pop on your air fryer lid too once it’s done and cook for another minute to give it a somewhat “grilled” taste. 🙂
