One our family’s favorites sweet treats are peanut butter cups. Years ago, my husband used to snack on Reese’s Peanut Butter Cups but we found a way to give him the sweet and savory flavor of chocolate and peanut butter in an easy no-bake recipe that’s a cinch to make – Fat Bombs! It’s Keto-friendly, low-carb, gluten-free and there are options to make with your favorite nut butter.

Ingredients You’ll Need

  • Creamy Peanut Butter – look for one that doesn’t have added sugar. Many of the store-bought creamy peanut butters are loaded with sugar.
  • Chocolate Chips – opt for dark chocolate that that has stevia (if you’re low carb) or a natural sweetener rather than refined sugar or corn syrup.
  • Cream Cheese – let the cream cheese sit for a while at room temperature so it’ll be easy to mix. Be sure to use full-fat cream cheese for this recipe to make it creamy.
  • Liquid Stevia – start with 10 drops and add more to taste. You can substitute your favorite natural sweetener like raw honey or maple syrup. Start with 1 tbsp of honey or maple syrup and add more to taste.

How to Make These Fat Bombs – Step by Step

1. Mix the cream cheese, creamy peanut butter, and liquid stevia extract in the mixing bowl of a stand mixer, until it’s smooth and creamy.

2. Chop 1 cup of chocolate chips with a knife until the chocolate is crumbly. Place the crushed chocolate onto a large piece of parchment paper. Roll the mixture into balls (about 1 heaping teaspoon of the mixture). Roll the balls in the crushed chocolate.

3. Place in an airtight container in the freezer. Store for up to 30 days.

Can You Use Any Nut Butter for These Fat Bombs?

Yes, you can substitute the peanut butter in this recipe for your favorite nut butter, including almond butter, cashew butter, and my favorite sunflower butter.

Which Chocolate Chips are Best?

I prefer Lilly’s Dark Chocolate Baking Chips. They are sweetened with stevia rather than sugar. Another option is Enjoy Life Semi-Sweet Chocolate Chips, which does contain 7 grams of sugar per serving so if you’re low carb you may want to stick with Lilly’s.

Can You Use Other Sweeteners?

Stevia is my preferred no-sugar sweetener of choice. But if you’re not low-carb you can use raw honey or maple syrup instead. Start with 1 tbsp of honey or maple syrup in place of the stevia extract and add more to taste.

How to Store and Keep These Fat Bombs

Store the fat bombs in an airtight freezer-safe container in the freezer for up to 30 days. Enjoy whenever you have a craving for a sweet and savory treat.

Top Tips for Making These Fat Bombs

  • Opt for full-fat cream cheese. It’s creamier and will taste so much better than reduced fat cream cheese.
  • Opt for no-sugar peanut butter or your favorite nut butter. Another option is to look for peanut butter sweetened with stevia or a natural sweetener (if you’re not low carb).
  • Chop the chocolate chips pretty fine so it’ll coat the fat bombs well. Or if you’re going for easy and simple you could just use mini chocolate chips and add it to the mixture rather than coat the outside.
  • Make a double batch of this recipe and store in the freezer.
