Fat bombs. They sound terrible right? Who wants to have fat bombs – let alone coconut oil fat bombs? Well, let me tell you they are delicious and so GOOD for you!
Years ago, I stayed away from fat. I ate a low-fat diet thinking that was the best way to stay thin and healthy. Boy, was I wrong!
I had horrible menstrual cramps and migraines during that time of the month. I was fatigued – even though I was in my 20s. I always felt hungry and craved carbs. I had brain fog. I was cranky and moody. The list goes on and on.
I avoided fat thinking it was the best way to stay thin. Turns out I was wrong. Low-fat diets are usually higher in sugar – which explained my constant craving for carbs – and also wreak havoc on the body. The body needs fat to function properly, to stabilize moods, to boost energy, and to feel satiated.
So yeah, I gave up low-fat foods and now I eat fat bombs. Well, coconut oil fat bombs actually. You see, coconut oil is fantastic for the body. Coconut oil has so many health benefits, and coconut oil helps you to lose weight.
This recipe is an easy way to get a daily dose of coconut oil in a candy-like treat that’s delicious and so filling. As soon as I have a sweet craving, I have one of these Chocolate Peppermint Coconut Oil Fat Bombs and I feel satiated all day long. Plus, each serving has 2 tbsp of coconut oil to help me burn more calories, increase my metabolism and curb cravings (so I eat less overall).

This recipe is inspired by my Paleo Peppermint Patties recipe. I got so many comments from my readers about how much they love it, but want a recipe that’s a bit easier to make. Well, you asked for it and you GOT it.
Where to Get Kitchen Pantry Essentials
I get my other baking supplies like baking soda, baking powder, vanilla extract, etc. either on Amazon or my local health food store usually. But then I got a Thrive membership. - 1/2 cup organic extra virgin coconut oil
- 1/4 cup powdered cacao or organic cocoa powder
- 1 tbsp raw honey or organic maple syrup
- 1/2 tsp organic vanilla extract
- 3-4 drops Peppermint essential oils where to buy

Combine all ingredients except the Peppermint essential oil in double boiler.

Turn heat on medium-low and stir mixture until melted.

Remove from heat and add Peppermint essential oil.

Fill silicone mold with mixture - about 2 tbsp per mold.

Place silicone mold in the freezer and allow fat bombs to harden - about 1-2 hours.

Remove from freezer and enjoy. Store in the freezer (lasts longer) to enjoy as a delicious snack anytime.

your recipe looks great want to try these this weekend. Do I have to use vanilla extract? I have food intolerances to vanilla. Could I just adjust the peppermint?
You can definitely omit the vanilla extract. It will still be just as delicious.
Can you use agave instead of honey ?
I personally wouldn’t. You could do maple syrup.
Think I could use my Chocolate protein powder instead of the coco powder?
You may need to modify if your protein powder is sweetened. Maybe give it a try with a smaller batch and omit the honey if your protein powder is sweetened.
This looks great, can’t wait to try. I have read in several places that honey loses it’s beneficial “powers” once it is heated, as is the case with eos. Can it be added once slightly cooled along with the peppermint eo?
Yes, you could do that. As long as the mixture is melted.
Is the cocoa powder suppose to be sweetened or unsweetened? I used the unsweetened and the finished product is soooo bitter.
I use unsweetened and the raw honey helped to sweeten it. Add a little more honey and see how that goes.
Can you use orange essential oil instead of the peppermint?
Yes, give it a try and tell me how you like it.
These sound amazing! Question though – what do you recommend if I don’t have a silicone mold? Well, I do have one but it’s for muffins (makes 6) and I’m thinking thats going to be way too big! I have a mini muffin pan but it’s not silicone. Thoughts?

To make them pop out easier, I suggest putting them in cupcake liners if you’re going to use direct in a muffin pan.

Really do need to give these a try because when that time of the month rolls by, my body needs all of the fat it can get! I have all the ingredients except the peppermint so I will wait to get those first
Just made these, they are in the freezer now. Can you tell me the nutritional information per your ingredients? I looked but did not see in your recipe. I got 6 total squares and using My Fitness Pal app, total carbs per piece equal approximately 4 carbs. I used ingredients I had on hand :
Organic virgin coconut oil
Hersheys natural unsweetened cocoa
Organic maple syrup
Pure vanilla extract
Pure peppermint extract

I couldn’t get the nibs to melt. Am I doing something wrong?
This is my mistake. I should have listed powdered cacao. So sorry. You could try to grind them first. I will update the recipe.
Do you have to use extra virgin coconut oil? The link you posted just goes to virgin coconut oil. I have virgin, just wondering if I should get extra virgin coconut oil. Thanks!
Do you use sweetened cocoa nibs or raw? The link takes you to sweetened, but I just have the raw cocoa at the moment. Will that still work? Thanks!
You might need to add a little more honey to your preference to sweeten it.
Can I use carob powder in place of cocoa powder?
I personally haven’t tried it, but if you do let me know. I have tried cacao nib and it works well too.
Do the ingredients have to be melted in a double boiler or can I use a small sauce pan on the stove top? I don’t own a double boiler but I’d like to try this recipe
I put one small saucepan on top of a larger saucepan OR use a glass measuring cup in a small saucepan = DIY double boiler. Hope that helps.
These sound awesome! Just wondering, if I don’t currently have peppermint essential oil on hand, would peppermint extract work? I have everything except the essential oil.
Yes, just adjust accordingly. You do get the therapeutic benefits if you decide to use Peppermint essential oil.
