How to Make These Gluten-Free Zucchini Fritters

  1. Gather ingredients together. Peel the zucchini to get it ready.

2. In a food processor, put the mixing blade in the bottom. Add zucchini, egg and garlic and puree. When it’s well mixed, add flour and salt.

3. In a large skillet, add avocado oil over medium heat. Add a tbsp of zucchini batter to the skillet and flatten with a spatula. Cook each side for about 2 minutes.

4. Remove from pan and let cool on a plate with paper towel for a few minutes. Then arrange on a plate and garnish with sour cream or yogurt and parsley.
