This recipe calls for pepper jack cheese to give it a bite, but you can easily swap it out for your favorite hard or semi-hard cheese, such as cheddar, sharp cheddar, Parmesan, or fontina cheese.

3. In a heavy sauce pan, melt the cheese and butter on low heat, until it’s smooth. Remove the sauce pan from the heat. Place an egg in a bowl and beat together until well blended. Add the egg mixture to the sauce pan and stir to blend. Add the flour mixture immediately, and stir all ingredients together.

4. Place a large piece of parchment paper on the counter, and sprinkle coconut flour over the paper. Turn out the cheese mixture onto the floured surface, and sprinkle a little more coconut flour on top of the cheese dough mixture. Place a piece of parchment paper on top of the cheese dough, and with a rolling pin, roll the dough as thinly as possible, to about an 1/8 of an inch thick.

5. Remove the top piece of parchment paper, and with a knife, or pastry wheel, cut the crackers into 1 – 2 inch squares. Prick the crackers with a fork, and then brush with melted butter. Sprinkle with the coarse ground garlic salt, and press down on the salt to press into the dough.

6. Leave the dough on the parchment paper, and slide the parchment paper on to a cookie sheet, or pizza pan. Place cookie sheet in a 350 degree oven for about 20 – 25 minutes, or until the crackers turn light golden brown around the edges.

A Great Gluten-Free Snack

These would make the perfect snack to have on hand during the week. They would be delicious with:

  • Hummus
  • Nut butters
  • Eggplant dip
  • Onion dip

Seasoning Options For This Recipe

These crackers are lightly seasoned, but the truth is your options are endless. The trick is to put about half of the seasoning inside of the dough, and use the other half to top the cracker with. Some good seasonings are either plain flaky sea salt, Italian seasoning, Everything Bagel seasoning or a ranch seasoning.

Top Tips for This Gluten Free Crackers Recipe

  • Allow extra time during the recipe to cool your dough. You can let the dough set in the refrigerator for 15 minutes before rolling it out & 15 minutes after. This allows you to create thinner crackers without them falling apart in the creation process.
  • Use a scale to measure out your baking flour to ensure accuracy!
  • Set a timer! Start checking on these starting at 15 minutes. Look for very light golden brown edges and completely dry looking crackers.
  • Let cool completely before storing. If they have any warmth to them when they are stored they could turn the crackers soft.
