Gluten-Free Banana Chocolate Chip Muffins

Looking for a healthy treat the whole family will love? These Gluten-Free Banana Chocolate Chip Muffins are perfect to serve as an after-school snack, kids lunch treat, or even breakfast and brunch.

It’s after school and the kids are hungry for a healthy treat. Serve up these delicious Gluten-Free Banana Chocolate Chip Muffins. They’re made with with oats and mashed bananas so it’s full of fiber and other real food ingredients.

We even serve these up for breakfast or a weekend brunch, and even as classroom treats at school in place of sugar-laden cupcakes for birthdays and other celebrations.

How to Make These Banana Oat Muffins

1. Preheat the oven to 375 degrees and line a muffin tin with paper liners. Combine 1 and 1/2 cups gluten-free flour, 1 cup gluten-free oats, 1/2 cup brown sugar (or 1/2 cup coconut sugar), 1 and 1/2 tsp baking powder, 1/2 tsp baking soda, and 1/2 tsp salt in a large bowl. Stir well.

2. In a separate bowl, mash 3 ripe bananas with a fork.

3. Add 2 eggs, 1/4 cup avocado oil, and 1/4 milk and whisk until combined.

4. Add the wet ingredients to the dry ingredients and stir until just combined.

5. Add 1/2 cup chocolate chips and mix until evenly distributed.

6. Fill each muffin cup halfway full of batter and bake in preheated oven for 18 to 20 minutes, or until a toothpick inserted in the middle comes out clean.

What Gluten-Free Flour to Use

Look for a gluten-free flour that is suitable for baking. I’m a big fan of Bob’s Red Mill 1-to-1 Baking Flour.

You can also make your own all-purpose gluten-free flour.

What Oats to Use

Be sure to opt for gluten-free oats. Not all oats are gluten-free. I like Bob’s Red Mill Gluten-Free Rolled Oats.

Can You Use a Sugar Substitute?

Yes, you can use coconut brown sugar or sucanat. Both are great sugar substitutes. I haven’t tested this recipe yet with monkfruit or stevia but those are options too. If you do try it, let me know how it goes.

What Chocolate Chips to Use

Enjoy Life is a great brand of gluten-free chocolate chips that’s also free of soy, nuts, dairy, GMO and vegan friendly. Lily’s baking chips are another great brand that’s sweetened with stevia instead of sugar.

Optional Additions to This Recipe

Here are more ideas to customize this recipe:

  • Use dark chocolate chips instead of milk chocolate chips
  • Omit the chocolate chips and add 1/2 cup of raisins
  • Omit the chocolate chips altogether
  • Add 1/2 cup chopped nuts like pecans or walnuts
  • Sprinkle shredded coconut flakes on top before baking

What to Serve with These Muffins

These muffins are great as breakfast, lunch box snack, after school treat, dessert, or any occasion where you want to swap out cupcakes or other sugar-laden treats. They can be served any time of year and will be family favorite just like they are for us.

Serve with fresh-cut fruit, hot chocolate, or a gluten-free quiche for a hearty breakfast.
