We’ve been eating lunch at home the last week since my kids are only in half-day summer camps. So I’ve been looking for gluten-free, healthy recipes at home. An all-time favorite recipe for is our Cheese Crunch Inside Out Quesadillas.
How to Make Cheese Crunch Inside Out Quesadillas
I learned this quesadilla trick from my husband. Rather than make a traditional quesadilla with cheese on the inside of two tortillas, he puts the cheese directly in the pan (coat it with real butter first) and then adds on tortilla on top of it and cook it so the cheese become crunchy and sticks to the outside of the tortila. He does it on both sides – so the tortilla becomes a delicious cheesy crunch concoction that my kids love.

- Cheese Crunch Inside Out Quesadillas (using Sharp Cheddar and Trader Joe’s brown rice gluten-free tortillas)
- Ham roll-ups (Trader Joe’s nitrate-free Rosemary ham and cheddar cheese rolled up together)
- Tart organic red cherries
- Organic avocado chunks
I like to serve up our lunches at home in fun, reusable containers like Re-Play Divided Plates (which are made in the USA from recycled milk jugs and BPA free).
