My poor husband was having caffeine withdrawals this weekend. Long before he started this paleo diet to manage his spondylitis and rheumatoid arthritis, he used to have a Monster energy drink daily (yes, I know it’s so bad – I had been telling him for years) and sometimes a Starbucks mocha frappacino when he needed an extra pick me up.
Thankfully, there’s no substitute for Monster energy drinks – I’ve since converted him to green smoothies – but I can totally understand his need for caffeine. I drink 3-4 cups of Earl Grey tea daily.
So I went searching for a paleo coffee drink. I tested a few different recipes and found one that was absolutely delicious from Clean Eats from the Zoo, a fantastic blog filled with paleo recipes and experiences from a mom who manages her kids’ allergies and asthmas through paleo-friendly foods. I can certainly relate as my own family’s journey has been similar.
Ingredients
- 1/2 cup coffee, chilled or room temperature
- 1/4 cup of milk (we cheat with cow’s milk but the original recipe called for full-fat, unsweetened coconut milk – the solid part from the top of the milk)
- 2 tbsp raw honey
- 2 cups of ice
- 1 tbsp unsweetened cocoa powder
- 1/2 tsp vanilla extract
Directions
Combine all ingredients in a blender. Drink right away because the milk and coffee will separate. Starbucks uses xanthan gum to keep it from separating.Makes 2 servings.
